Preheat the oven to 350 degrees. โฃ

Place the chicken in a baking dish along with the olive oil, zaatar, garlic, lemon juice, and salt. Rub it all in, and rub it all over. โฃ
Bake for 1 hour (about), until golden brown. It all depends on how fat your chicken is. โฃ
To check if the chicken is fully cooked, cut a small slit into the thickest part of the thigh and breast; the juices should be clear like water. โฃ

Put the broiler on for the last five minutes to get it nice and golden brown. โฃ
Remove from the oven and allow to rest for 5 minutes. โฃ
Sprinkle with the fresh cilantro and pomegranate seeds before serving.
