In the mood for a pork belly bahn mi but don’t have the time to boil, roast, and then grill pork belly? This bacon bahn mi is the solution. In the time it takes you to cook up bacon, you have a sticky maple bacon bahn mi. This recipe makes two big sandwiches.

A bahn mi is an action-packed Vietnamese sandwich filled with grilled meats, pickled vegetables, sauces, and fresh herbs. Bahn mis are typically made in French baguettes and are overflowing with colors, textures, and deliciousness. Vietnam was part of French Indochina in the mid-19th century, which was when the baguette was introduced to Vietnam.

 

Pickled Carrots:
  • 3 tablespoons rice vinegar
  • 1/2 cup warm water
  • 2 tablespoons sugar
  • 1 carrot, sliced thinly
Sauce:
  • 1 teaspoon ginger, grated
  • 1 clove garlic, grated
  • 3 x 1 inch pieces lemongrass
  • 3 slices jalapeño
  • 3 tablespoons maple syrup
  • 2 tablespoons soy sauce
  • 1 dash fish sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 6 strips of bacon
Garnish:
  • Cucumbers
  • Green onions
  • Cilantro leafs
  • Mint leafs
  • Roasted peanuts
  • 1 good baguette (go to a bakery)

 

How To:

The pickled carrots are better the longer they pickle. If you can, make them the day before but a few hours is enough to get a little pickling action going.

In a container with a cover, place the 3 tablespoons vinegar, 1/2 cup warm water, and 2 tablespoons sugar. Whisk until the sugar is dissolved.


Wash and peel the carrot with a potato peeler and then make thin strips, with the same peeler. Place the carrot strips in the vinegar solution, cover and place in the fridge overnight, or until you make the sandwiches.

Make the sauce by grating the ginger and garlic and combining them in a bowl with the lemongrass, jalapeños, maple, soy sauce, fish sauce, sesame oil, and vinegar. Whisk until everything is well combined and set aside.

Before cooking the bacon, it’s best to have all your prep ready. Wash and dry the mint and cilantro leafs. Chop the cucumbers, green onions, and peanuts.

Cut the bacon in thirds; I find it makes the sandwich easier to eat. Place the bacon in a frying pan on medium heat.

Do not add any oil. Place all the bacon in the pan at once, trust me it works.

Cook until the bacon changes color and curls up, but remove before it gets crispy.

Remove the bacon from the frying  pan and place on paper towels. Drain the bacon fat out of the pan and add the sauce.

Let the sauce simmer for 2 minutes on medium heat.

Add the bacon back into the frying pan, simmer for one minute, then remove from the heat.

I toast my baguette in the oven ever so lightly before assembling the sandwich.

Add the bacon on one side of the bread and everything else on the other side. It is suppose to look like an explosion of goodness.
