This recipe is one of my all time favorite quick and easy recipes. It is light and yet so satisfyingly filling. The maple syrup adds a touch of smoky sweetness, and the broccoli is the rice. This recipe can be prepared and cooked within 15 minutes.

-1 head of broccoli ⁣
-2 tablespoons olive oil⁣
-2 cloves garlic, minced ⁣
-Squeeze of lemon ⁣
-2 salmon fillets ⁣
-2 teaspoons maple syrup ⁣
-Vegetable oil for frying⁣
-Salt & black pepper ⁣

Grate the broccoli into small (rice-like) pieces on a grater.

Or you can simply cut the broccoli into small pieces with a knife.

Place a pan on high heat, add the olive oil and the garlic.

Fry for 30 seconds and add the broccoli pieces and a pinch of salt.

Fry for about a minute, remove from the heat, add the squeeze of lemon.

Place a pan on high heat, add a few drops of vegetable oil. When the pan is hot, salt and pepper the salmon and place in the pan.

Once the salmon forms a crust, about a minute, flip and drizzle with the maple syrup. Cook for one more minute and remove from the heat.

Place a generous amount of broccoli “rice” on the bottom of the plate and top with the salmon.
