I am a big fan of lettuce-less salads; there is something oh-so hardy about them. This cucumber and pomegranate salad is the perfect amount of crunch, crisp, and tang. A crumbling of feta cheese and drizzling of pomegranate molasses would not be wrong here.

The what: 

  • 1 large cucumber (hard)
  • 1 small white onion, diced
  • 1/2 cup pomegranate seeds
  • 1/2 cup mint leafs
  • 1/3 cup almonds, toasted
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper

 

The how:

Slice the cucumber into bitesize piece and place in a bowl. Dice the onion and add to the bowl. Wash and dry the mint leaves, and add to the bowl along with the pomegranate seeds, toasted almonds, olive oil, lemon juice and a pinch of salt and pepper. Toss and enjoy.
