Everything about birthday cake popcorn is a win. The birthday part, the cake part, and the popcorn part. The kernels are so festive and joyful, great for a party or a little indulgence for one.

The What: 
  • 7 cups popped popcorn
  • 3/4 cup white chocolate (chips or chunks)
  • 3 tablespoons white or yellow cake mix
  • 1 teaspoon vegetable oil
  • 1 tablespoon sprinkles
  • Extra sprinkles for decoration
The How: 

Place the popcorn in a large bowl, big enough that you can get both hands in there and toss  without making a colossal mess.

 

Line, with parchment-paper, a baking sheet and set aside.

 

Place the white chocolate chips or chopped chocolate in a microwave safe bowl and microwave on high for 30 seconds. Take it out, stir, return and microwave for another 20 seconds. Take it out and stir again. Continue doing this until the chocolate is completely melted.
Once the chocolate is velvety smooth, add the vegetable oil, cake mix, and one tablespoon of the sprinkles. Stir until completely combined. The mix will be thick.
Pour the chocolate mix over the popcorn and toss well. Try to get white chocolate on each and every kernel.
Pour the mix onto the lined baking sheet and sprinkle the top with more sprinkles. Allow the popcorn to completely dry, this takes a few hours.
The kernels will clump together, break them into bitesize pieces and store in an airtight container – they won’t last long.
