This is an Italian inspired avocado toast. The creaminess of the avocado goes incredibly well with the herbiness (not an actual world) of the pesto. – 1 ripe avocado
– 1 teaspoon pesto
– 1/2 teaspoon lemon zest
– 1 teaspoon extra virgin olive oil
– 1 tablespoon Parmesan cheese, grated
– Slice of bread
– 3 cherry tomatoes, sliced
– Extra olive oil, pesto, and Parmesan cheese for decorating.
Place the avocado, pesto, lemon zest, extra-virgin olive oil, and Parmesan cheese in a bowl. Smooch with a fork until smooth and well combined. To get an even more creamy texture, you can blend the mixer in a food processor.
Spread the avocado mixture over some toasted bread. Decorate with the cherry tomatoes, a drizzling of pesto, a sprinkling of Parmesan cheese, and a drizzle of extra-virgin olive oil.
