Why:

Granola bar recipes have such a long list of ingredients that it’s exhausting trying to buy all the nuts, seeds, and oats. But with a good quality store-bought muesli mix, these deliciously healthy bars are a dream to make.  Bob’s Red Mill makes a great Paleo muesli mix that contains a lot of coconut flakes (that’s the one I used in this recipe).

What: 

  • 1 cup Majdool dates, pitted
  • 1/2 water
  • 1 tablespoon maple syrup
  • 1 tablespoon coconut oil
  • 2 tablespoon peanut butter
  • A pinch of salt
  • 1 tablespoon vanilla paste
  • 1/2 teaspoon cinnamon
  • 2 tablespoons flax seeds
  • 1 1/2 cups muesli mix
  • 1 cup puffed rice (AKA Rice Krispies)
  • 1/2 cup dried cranberries (for decoration)

 

How:

Pit the dates and cut them into smallish pieces. Place the dates and the water in a saucepan over medium heat.

Once the mixture has turned into a paste, this should take a couple of minutes, remove the pan form the heat and add the maple syrup, coconut oil, peanut butter, salt, vanilla, and cinnamon. Mix until the peanut butter is completely disolved and set aside.

In a bowl, mix together the flax seeds, muesli mix, and puffed rice.

Pour the date paste into  the muesli bowl.

Stir with a spoon at first until the mixture cools down a little and then knead with your gloved hands until everything is incorporated.

These gloves are clearly not the right size, but I made it work.

Empty the mixture into the container of your choice.

While the mixture is still warm, press the dried cranberries into the top.

Refrigerate for a few hours before eating.
