Many adjectives, one delicious side dish. This baked mashed potato dish is great for reviving leftover mashed potatoes and can be prepared ahead of time and baked right before eating. You can even add one more adjective (cheesy) by mixing in some gruyere into the mashed potatoes and topping with parmesan cheese.

The What:
  • 7 potatoes, peeled
  • 1/4 cup milk
  • 2 tablespoons butter
  • Salt and pepper

Topping:

  • 1/4 cup butter (1/2 stick) melted
  • 1 cup panko breadcrumbs
  • 2 cloves garlic, crushed
  • 1 teaspoon dried oregano
  • Salt and pepper

 

The How: 

Preheat oven to 350 degrees.

Peel and roughly chop the potatoes. Place in a large pot of salted water over high heat. Bring water to a boil. Lower the heat to medium-high and simmer for 20 minutes.

Drain the potatoes into a strainer and place them back into the pot. Add the 1/4 cup of milk, 2 tablespoons of butter and a pinch of both salt and pepper.

Ussing a potato masher, mash and mix all the ingredients together until they are magically transformed into fluffy mashed potatoes. If you have one, use a ricer.

Place the mashed potatoes in a baking dish and spread out evenly.

In a small bowl add the 1/4 cup of melted butter, breadcrumbs, crushed garlic, oregano and pinch of salt and pepper. Mix until the breadcrumbs have absorbed all the butter.

Spread the breadcrumb mixture all over the mashed potatoes; in essence it it a savory crumble. Place the pan in the oven and bake for 15-20  minutes or until the top is golden brown. If you have gravy on hand, drown it in gravy!
