To get the garlickiest of flavors, I unapologetically use ten cloves of garlic in this recipe. Maybe this is not the best dish for a first date. Or maybe its the perfect dish; garlic is an aphrodisiac.

Ingredients: 

  • 1/4 cup extra virgin olive oil
  • 10 cloves of garlic, minced
  • 2  (400g) cans tomatoes in their juice
  • 1 tablespoon salt
  • 1 teaspoon sugar
  • 10 basil leafs, chopped
  • 2 fresh tomatoes, peeled, seeded and diced

 

How To:

Peel exactly ten cloves of garlic and mince finely.

I used a blender, it took about 10 seconds.

Pour the extra virgin olive oil into a small pot and place over medium heat. Add the garlic and continuously stir them for 2 minutes.

Once they have sweated down slightly, but before they turn brown, add the two cans of tomatoes along with their juice.  (It doesn’t really matter if you bought diced or whole tomatoes because you are going to blend them anyway).

Cover and simmer the tomatoes and garlic for 10 minutes then add the salt and sugar and simmer for another 10 minutes, covered.

Meanwhile you can prepare the fresh tomatoes. With a small knife gently core the skins of the tomatoes. Two cuts that form an X at the base is enough. Place the tomatoes in boiling water for 30 seconds, remove and place directly into ice water.

This should release the skin easily.  Peel the tomatoes, remove the seeds and dice into small pieces. Set aside.

Remove the simmering tomatoes off the heat, add the basil and stir. Blend the tomatoes, either with a handheld blender or a traditional blender until smooth.

Place the pot back on the heat and add the fresh diced tomatoes. The fresh tomatoes, as you can imagine, add a freshness to the pasta sauce and some texture. Don’t skip this step, it really makes a difference.

Simmer the sauce for 5 more minutes, and serve.
