Ingredients:

  • 1/2 cup granulated sugar
  • 1/2 cup melted butter
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tablespoon vanilla
  • Zest of one lemon
  • 1 3/4 cup all purpose flour
  • Pinch of salt
  • 1/2 teaspoon baking powder
  • 1/2 cup sprinkles  + 3 tablespoons for topping

 

How To:

Preheat oven to 350°F (180°C).

Place the butter and granulated sugar in a bowl and whisk until combined.

Add the brown sugar, whisk until combined.

Add the egg, vanilla, zest and, you guessed it, whisk until combined.

In the same bowl add the flour, salt, baking powder and stir with a wooden spoon until it forms a dough.

Add the 1/2 cup of sprinkles and stir in gently until evenly dispersed.

Place a parchment paper on the baking sheet.

Spoon small amounts of dough and form them into perfectly round balls between your palms. Roll the balls in the remaining sprinkles and place them on the cookie sheet.

Bake for 10 minutes. They will look a little undercooked and puffy.
