This is the lazier version of the True Food Kitchen one. I halved the recipe and I don’t blend the ingredients, I mush. Also, I boosted the coconut flavor by dumping a whole bunch of coconut flakes in and on the pudding.

  • 1 ripe banana
  • 1 cup + 2 tablespoons coconut cream
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla paste
  • The juice of half a lemon
  • Pinch of salt
  • 3 tablespoons chia seeds
  • 1/4 cup dry grated coconut

In a bowl, mush the banana with a fork. I like to leave a few pieces in there to give texture, and because I usually get bored of mushing, real quick.

Add the coconut cream, sugar, vanilla, lemon juice, salt and mix well with the same fork you mushed the banana; who has time for dishwashing?

When evenly blended, add the chia seeds and the grated coconut and mix again.

Cover and set aside for 30 minutes to let it rest.

After 30 minutes, stir it to incorporate the chia seeds once again. Cover and place in the fridge over night. The chia seeds plump up and the mixture thickens.

When you assemble, you can make a little parfait with layers of coconut and layers of pudding. I like to top it with almonds to give a crunch factor. You can also eat it directly out of the container while you watch dirty reality tv. You can do this because it is so healthy it counteracts the negative affects of trashy shows on your body.

Full Disclosure: I took the stylish pictures of the parfaits and then dumped it back into my pudding tupperware and literally ate all of it in one sitting and felt full for 15 hours after that.
