This is a great summer recipe; Its fresh taste is very versatile. Charred Corn Pico De Gallo goes great with some tortilla chips as a dip, on some grilled fish as a sauce, or in chicken tacos as a salsa.

  • 2 tomatoes, diced
  • 1 small onion, diced
  • 1 ear of corn
  • Jus of 1 lime
  • 1/3 cup cilantro, chopped
  • 1/4 cup fresh pineapple, diced
  • 1 teaspoon salt

Wash and dry the ear of corn. Grill the corn on the barbecue until it is mostly charred. Remove from the barbecue and let cool. Using a sharp knife and a sawing motion, remove the kernels.

If you don’t have access to a bbq, simply char the corn on a gas burner or in the oven on broil. A blowtorch would work in a pinch, but I haven’t tried it so don’t quote me on that.

Combine all the ingredients in a bowl, cover and place in the fridge.

Serve with tortilla chips, or as a side to grilled meat.
