What could be more festive than a birthday bundt cake? The answer is not much. I dare you to stare at sprinkles for 2 minutes and not smile; you simply can’t. The way the sprinkles swirl inside this fluffy sponge cake is magical.

 

The What: 
  • 3 eggs
  • 1 3/4 cups sugar
  • 2 tablespoons pure vanilla extract
  • 1/2 cup vegetable oil
  • 2 1/4 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup sprinkles

 

The How: 

Preheat the oven to 350° F (180°C). Butter and flour a bundt pan and set aside.

Place the eggs, sugar, and vanilla in a stand mixer with the whisk attachment.

Mix on speed 2 for 10 minutes. The mix will double in size and turn a pastel yellow.

Meanwhile, measure out the dry ingredients (flour, baking powder, salt) onto a piece of parchment paper, or a bowl if you enjoy doing the dishes.

While the mixer is still on, drizzle in the vegetable oil.

Turn the mixer off, add in the dry ingredients and the milk, and mix on low until combined.

Using a spatula, scrape the bottom of the bowl and stir to get rid of any hidden flour bubbles. Add the sprinkles and stir them in with the spatula.

Pour the mixture into the prepared bundt pan.

Bake for 45-50 minutes. Let cool for at least 1 hour in the bundt pan.

Flip it over on to a plate or cake-stand and allow to cool for another hour.

I only decorated half the cake with unicorn throw up because half my family does not like fun and deliciousness, so they ate the boring undecorated side.

Once the cake if fully cooled, you can decorate. I went simple with 1 cup powdered sugar and 1 tablespoon milk, with a tiny squeeze of lemon. I whisked them together until they formed a paste. I poured that over the top and sprinkled it with sparkly colorful sugar (kinda like if a unicorn throw up on the cake).
